About this gift
Western Cider Company's The Colonial is a New England-style cider - a style that originated in the Northeastern U.S. colonies over 300 years ago. At the end of apple harvest, barrels of cider were sweetened with brown sugar, maple syrup, honey, or molasses. The added sugar boosted alcohol levels to keep the cider safe from spoiling until the next harvest. Raisins were added for flavor, as well as a source of yeast and tannin. The use of darker sugars also results in a much bolder and intense flavor profile.
Western Cider's New-England style cider was mad by mixing a blend of Northwest apples, Belgian Candi, orange peel, and a blend of whole spices. It rested for 6 months on raisins in barrels, allowing it to take on subtleties of oak and fig.
About Western Cider Company: Founder Michael Billingsley and his wife Arielle planted a cider apple orchard in 2010 in Montana's Bitterroot Valley - an area with a rich apple history. Inspired by traditional cider cultures from around the world as well as modern American cider styles, Western Cider Co. is committed to making cider for everyone - from easy-drinking to complex, affordable and high-end, traditional and experimental.
