Presque Isle Farm Cider's OLO is a a cider fermented in Oloroso Sherry barrels and Neutral French Oak Casks. Made from a blend of exceptional cider apple varieties, including: 35% Dabinett, 30% Golden Russet, 15% Hewe’s Crab, 10% Kingston Black, 10% Brown Snout and Cox Orange Pippins. Partially spontaneously fermented with native yeast, fermentation was also assisted by a wine yeast.
Tasting Notes: Great aromatics on this cider - notes of white grape and soft wood, with a burst of recognizable tropical notes from the Golden Russet upon swirling your glass. Dry (drinks slightly off-dry) and full bodied with a subtle warming on the finish - this beauty drinks naturally imperial. Great balance in the tannin & acidity (medium-plus). Crisp apple, tropical guava, slight wood and vanilla notes are all first to be noticed. A subtle sweetness carries the tannin and acidity through mid-palate with nots of orange zest, apricot, and wood. Notes of vanilla and orange soften a drying finish.
