Little Pomona's Bright Lights is a sparkling dry cider made with a mostly Bramley apples, pressed together with some locally grown perry pears, a few kilos of medlars, and some Dabinett grown right next to Little Pomona's farm in Herefordshire, England.
Bright Lights is a continuation of Little Pomona's experiments with non-traditional cider apples. Fermented wild, the transformation from sweet juice into a spine-tingling mouthful of juicy, bright citrus, perfumed flowers and blossom honey was something quite mesmerizing. In order to slightly tone down the “cattle prod” acid that Bramley apples like to give, Little Pomona blended in a small component of Dabinett and Michelin from barrel for harmony and then bottle conditioned it for a little natural sparkle.
Serve cold with warm company and good food!
Tasting Notes: Dry with medium-plus acidity and medium tannins. A biscuity and tart aroma - which we love in a lively cider like this one. Tart and juicy with notes of apple skin, lemon, and a smartee-candy like vibe to it.
