Empyrical Cider's Inversion is an elevated Pear Cider, and one of our favorite annual releases from Empyrical. The base cider is made from a bittersharp forward blend of cider apples, including Winesap, Porter's Perfection, Spitzenberg, Golden Russet, and Reine de Pomme. After primary fermentation, the cider is finished a la Methode Traditionelle with an oaked perry blended together with fresh perry pear and comice pear juice.
Inversion IV is the latest vintage of inversion. It's semi-dry with luscious fruit sweetness and texture. Each prior vintage has been amongst Empyrical's fleet of award winning ciders at the most competitive cider competitions in the U.S. We expect Inversion IV to join the ranks during the coming year's award season.
Tasting Notes: Juicy pear, light apple, and hints of caramel on the aromatics. Dry, medium-plus acid, medium-minus tannins. Notes of fresh, Ripe pear, candied pear, cooked pineapple, apple skins, melon, light bitterness. Dry, crisp finish with lingering mouthwatering acid.
