This intense polishing removes seventy seven percent of the outer grain, leaving only the purest core. Unlike mass market alternatives, this premium sake is crafted batch by batch. The production team makes the koji entirely by hand and ferments the yeast starter in small tanks. This meticulous craft method ensures an extraordinary level of quality and precision.
