Three spritz profiles for the alpine aperitif hour. Aperitivo carries the bittersweet orange top in the style of a proper Italian spritz, The Hugo Spritz holds the floral middle with elderflower and mint, and Tart Cherry finishes with the sharp bite of real black cherry. Each flavour makes its own spritz, so a bottle of prosecco can pour three ways.
Drop two cubes of any one flavour into a 16oz glass. Saturate with 3oz of water for 30 seconds. Muddle the saturated cubes until they become a simple syrup. Add ice, then top with 4oz of prosecco and 2oz of soda water. For a zero-proof pour, top with sparkling water instead.
Aperitivo: bittersweet orange with a bitter herbal finish and paprika extractive for colour.
