Clos Cibonne sits on breezy hills above the Mediterranean near Toulon, within the elite Côtes de Provence crus classés, a designation earned over 70 years ago and held by only a handful of estates. Here, fifth-generation winemaker Olivier Deforges farms just a small team and works almost entirely by hand, crafting this cuvée from roughly 90% Tibouren and 10% Grenache. What truly sets it apart is the élevage: the wine is aged in century-old foudres under a veil of flor, a technique more commonly associated with the Jura or Jerez. The result is a rosé with real dimension—one that carries the imprint of sea air, sun, and soil in a way that feels almost transportive.
