About this gift
This is Peter Dredge at his fizzing best - a vintage méthode traditionnelle sparkling made entirely by hand, from vineyard to tirage to disgorgement. The fruit is from a single site in the Tamar Valley, mostly Pinot Noir with a small pinch of Meunier, bottled under the Dr. Edge label as part of the ‘P.J. Dredge’ sparkling series.
Pressed and bottled in 2020, it spent five years on lees before being disgorged in early 2025, no dosage added - Brut Nature, bone dry. But don’t expect something austere or hollow. It’s textural, layered and very concentrated.
This is a classic, elegant sparkling wine made with intent and zero shortcuts. Limited in volume, as always, and drinking beautifully now - though there’s absolutely no rush.
